I totally wasn’t paying attention and out raw onion into my meatballs. They’re on the stove w the meat mixture in ball forms and I feel like I just wasted 4 pounds of meat… what do I do??

Don’t I have to sauté them first? Will they cook normally?

what’s the issue? I intentionally put raw onions in the meatballs. the onions cook with the meat

Let them simmer gently in the sauce maybe for a little longer than you usually do. Taste one. They’ll probably be delicious. Was the onion chopped or grated. If the pieces were big you might find bits of onion in the meatballs and some kids might not approve but the taste will be fine or better than fine.

I diced the onions but some were a little larger. Totally nervous they won’t cook through

Nobody ever died from eating raw onions. It’s ok if it is not your best batch. Cook them a little longer. They will be fine.

I usually grate my raw onions to add to meatballs. Diced is totally fine. You may not love the texture, but many Sephardic recipes for kofta (ground meat kebabs) and arayes call for roughly chopped onions. Again, I still grate my onions when I make such recipes, but many people chop them roughly and enjoy them just fine. No added cooking necessary.

if the meat will be cooked through then the onions certainly will be too

I do that all the time. I dice the onions and put them in raw. Tastes yummy!

I also never saute my onions. These days I often leave them out as ds won't eat the meatballs if there are bits of onion. Yes, he will find every little speck and get upset.
But the onions do cook fine. It's not the same flavor as sauted, but they go soft.
