Cook the potatoes, scoop out the inside, mash it with broccoli and cheese and bake in the oven. Sound right? Am I missing any steps or ingredients?

Sounds about right. I'd add aome butter, salt, and any other seasonings you like.
I also normally bake a sweet potato, and mash it up with the regular ones. It adds a bit of extra flavour and volume.
Obviously, vary the filling as as you like.
Try to make sure the potatoes are approximately the same size, so they take the same amount t of time to cook.

I scoop out about 1/3 of the potato mash it with grate zucchinei, cheese, tuna put it back in bake for about 15 min or so.

Maybe just skip the cheese. Add some of the potato water to make it smooth. I love cheese, so that's my favorite part, but it might work without it.

Use any of the non dairy butters or margarine. They also have non-dairy cheese now that's supposed to be very good think it's called Daiya
