Usually when you freeze chicken it comes out dry. I heard that if you freeze it in sauce it doesn’t. Is it true?

It’s true.
Baked and grilled chicken don’t come out good if you freeze. Grilled chicken cutlets from the freezer are inedible and so are breaded chicken cutlets. Prepare them and freeze raw, defrost fully and then bake or grill as usual. Do not put in oven while they’re still frozen.
Chicken simmered in a sauce and frozen in the sauce is almost as good as fresh. Same as above, defrost fully before heating for best results.

Capons are delicious even after being frozen
You posted in heathy cooking so I won’t suggest stuffing them with rice or kishka or smearing with duck sauce
For this week I sautéed onions and mushrooms for the stuffing. I added spices and seasoning and lemon juice, olive oil and a dot of honey on each piece.
