Would love to start earlier this year! What do you start with, what do you leave for last minute….where do you store the food? A special freezer?

I start after purim as soon as I can buy basic pesach items in the shops but it's very stress free at that point. I have a cleaned freezer ready by then and I gradually build up a supply of soups, kugels, sides, cakes, desserts and meats. Almost everything freezes well. Things like chicken, fish and roasted veg I always make fresh. I'm not spending a lot of time, but just doing one thing every day builds up stocks really quickly.

I only bake cakes, cookies, crackers, desserts, squeeze fresh juice.

Everything else I do Erev yt/on yt upstairs in my regular kitchen

I start at some point between Purim and pesach. I do this before cleaning for pesach.
