What do you mean by vegetable meatballs? Do you want to hide veggies in the meatballs and sauce, or do you want meatballs simmered in sautéed veggies?

I put zucchini or spinach in the food processor and mix it into my meat mixture. Sometimes I and it to the sauce too

I add shredded zucchini and sometimes shredded carrots to my meatballs. For adults and toddlers alike

Instead of breadcrumbs or matzoh meal, I grind up whole oats. That is if you put in any of those usually.
I add pressed garlic, onions, zucchini, carrots.
It’s so moist and delicious. You cannot taste the veggies.
Raw herbs vs dried.
