What do you eat purim morning? We eat the meal very late, like 1:00/1:30. The entire morning is rushing around town giving mishloch monos and being surrounded by nosh. What can I serve my family that is quick to eat and healthy and still good to eat?

Usually I'll eat yogurt and fruit before heading out.
Overnight oats is a good idea since it doesn't have to be made fresh

Most people I know eat one meal before shkiya so ideally they should eat a big breakfast because lunch will never happen. If you eat two meals, the first being a late lunch, eat whatever, you'll be having a big lunch anyway.

Breakfast? Everyone in house must eat following davening and megilla.. there is no leaving to give shaloch manos or join purim groups without eating. I stock house with bagels, lox , cream cheese etc, have hot water ready for coffee or coco... cut up fruit. Etc
Well fed is the name of the game for a smooth day! (Also counts as first suda)

The seuda is supposed to be from the 14 into the 15
It ideally needs to be around shkiah and go until tzeis

There is a kosher coffee shop that is open on purim and I take my kids there after meggilah and each one eats a breakfast special. (I give them milk instead of coffee).
It’s the only way they will stay sane until the purim meal.

I do scrambled eggs and pita sandwiches early while dh is still out at shul. Kids still in pjs. Then they put on costumes and we start our rounds about 11ish. We end our rounds about 2/3. Come home for some quiet time when I serve cut veggies that I prep before, fried chicken, cold cuts, challah.... our main seuda is at 5.30 and is chaotic by my parents with too many people to keep track if everyone will eat normally. And by then my dh is drunk so im a one man show. I want to know that they ate something normal and whatever happens after is mostly sugar and junk. We don't get home until midnight or later.

I prepare the frozen ready to baguettes ( throw in oven )
They are delicious and while they bake I scramble up a bunch of eggs . Put out cream cheese and butter and yogurts and some cut up vegs and everyone eats a proper breakfast at diff times I leave the eggs and rolls in oven on 200 degrees all morning.
Then whatever junk they eat is the rest of their day lol but at least they had a good start

We eat scrambled eggs and toast.
You can make something quick for everybody on cookie sheets in one shot, like eggs in a frame (Sunnyside up within a slice of bread, one after another so they're all baked together).
Or a frittata. Have the veggies cut and ready, mix up eggs, and bake in a pan. Serve slices.
Can do a sheet pan of eggs and veggies to get one long flat piece. Roll up into roulada.
Or a baked French toast casserole, cut pieces for everyone.
