I am not limited on vegetables but I am very limited in dressing options.
Right now I have a lemon/oil dressing. Need one more.
CANT USE VINEGAR, KETCHUP, MUSTARD
CAN USE CANNED TOMATO SAUCE, BALSALMIC VINEGAR, MAYO
any and all help would be much appreciated!

Balsamic vinegar, maple syrup or honey, olive oil, salt and pepper (basil and/ or garlic would also be good in here)

Maybe you really prefer a recipe to prep, but just as an idea, I usually, including Shabbos salads year round, will just add evoo, (either vinegar or) lemon or lime juice, spices to taste like lots of garlic & onion powder, dill parsley sometimes a little Italian spice, & pepper (sometimes leave salt for people to add on their own, keeps the vegetables crunchy (vs sweating).
