thanks, the two I see on kosher.com either use other kinds of ground meat, like veal, and I only have ground chicken, or includes celery and the comments say its very dry. Amother green, Im looking for a ( somewhat) sweet recipe to serve instead of fish. I have the chicken defrosting to make it tomorrow and hope someone can share a recipe

First put water with sugar and spices(salt, pepper, paprika) with sliced carrots and potatoes to boil in an 6 or 8 quart pot. About 1/2 a pot. Not a full pot.
Meanwhile
For 2 lbs ground chicken
2-3 eggs
1 small raw potato grated
1 cooked potato mashed
1 small onion grated
( 1/2 grated carrot optional)
Salt, pepper , paprika
3 tablespoons sugar
Mix well
We don’t like it too sweet. But some like it very sweet. Taste the water and see how much sugar you want to add.
When the water boils put in the mixture with a spoon. It comes out oval shaped.
Cook on medium flame for about an hour.

You can also use this mixture to fill peppers or bake as a roll in the oven.
You can fry patties too- just skip the sugar in the mixture.

This is great, just add chicken and beef knee bone to the water and cook for a couple hours before adding your rolls. It will give you a fat and jelly like sauce.

so they smelled really good, and tasted good to me..they didnt look smooth-they were kind of bumpy, not sure if thats due to my inexperience or the chicken mixture was too runny, needed more potato or something, but overall great!

I’m glad it worked out. You could add more cooked potatoes . But I found that if the mixture is firm- then it comes out too dry.
Here’s a trick- when you take mixture on the spoon smooth and roll against the side of the bowl. Then put the spoon with the mixture into the boiling water. Wait a second before releasing.

If you don’t want it to be dry, do not cook for an hour. Cook until the chicken isn’t raw or pinkish inside. Take one out after 30 minutes and cut it in half. If it’s done in the middle, shut the flame. If it doesn’t seem done check another one five minutes later. You’ll have a couple that are cut in half but they’ll all taste much better. Adding a tablespoon of oil and a tablespoon of ice water to the batter also makes them moist.
