Looking for a winning zuchinni recipe

I can only eat so many potatoes so I bought a bunch of zuchinni. Some of my kids really really dont like it and some are more pareve. Either way DH and I will like it. Anyone have a winner recipe that even my kids who are eh will like?

Peel the zucchini and discard the peels.
Peel the remainder into strips until you get to the seeds.
Saute in light olive oil, salt, and garlic and enjoy your zucchini ribbons!

We love zucchini "spaghetti" salad. We use a julienned peeler. Add mini onions, garlic, mushrooms and grape tomatoes (very lightly sautéed).

Also love zucchini sautéed al dente with garlic, basil, some yellow squash and halved cherry tomatoes. Season well.

Creamy zucchini soup is our favorite here.

And also cauliflower mock potato soup (similar but peeled so no green stuff, along with half cauliflower).

Another great one is small roasted zucchini boats topped with finely diced tomato/balsamic salad- like bruschetta.

Have you tried zucchini in tomato sauce/marinara?
Also roasted in oven drizzled with olive oil, lots of spices.

I roast it a lot and the adults like it. The kids less so. Tomato sauce is a god idea. I think I made that many years ago and forgot about it.

Would you try zoodles? Just spiralize them and sauté in oil for a bit then add salt and pepper.

You can make a zucchini ratatouille with other veggies as well. That's delicious.

We also love a good zucchini meat soup. Use any zucchini soup recipe and add in a piece of meat like flanken or cheek meat. Cook for hours, take out the meat, blend the soup, shred the meat and add it back.
