You can make any crumble recipe, even if it calls for eggs- just omit. Also snowball cookies have no eggs.

Apple crumble

Crumbs

2 cup almond flour
1 1/2 cup potato starch
1/2 cup oil
3/4 cup sugar
1 tsp cinnamon

Place all ingredients in a bowl and mix gently with your fingers until you get a nice crumb.

Chocolate chip cookie bars
1.5 cup sugar
1/2 cup oil
1/2 cup water
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon vanilla extract
1 cup cake meal
1/2cup matzo meal
1 cup chocolate chips
Bake at 350 until edges golden brown

Fudge Babies

1 1/2 cups pitted dates
1 1/2 tbsp cocoa
1/8 tsp salt
small handful mini chocolate chips, optional
optional cocoa, shredded coconut, melted chocolate, etc.

Combine the first three ingredients (and chips, if using) in a strong food processor or Vitamix, and blend until completely smooth. Scoop into a bowl, and freeze until the sticky dough is firm enough to roll balls (a half hour or so). Once balls are rolled—either with your hands or a mini cookie scoop—you can roll in the optional cocoa or coconut, or just eat them plain. I store leftover raw chocolate fudge balls in the freezer to keep them as firm as possible.

Chocolate Cake

1 1/2 cups matzo cake meal
1 cup potato starch
2 cups sugar
1 teaspoon salt
2 teaspoons baking soda
1/2 cup cocoa
3/4 cup oil
2 tablespoons pesach vinegar or lemon juice
2 teaspoons vanilla extract
2 cups cold water

Sift matzo meal, potato starch, sugar, salt, soda, and cocoa together into a 9 x 13 inch ungreased cake pan. Make three wells. Pour oil into one well, vinegar into second, and vanilla into third well. Pour cold water over all, and stir well with fork.
Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until tooth pick inserted comes out clean.

Russian Tea Cookies

1/2 cup oil
1/2 cup confections sugar
2 1/2 cups almond flour
1/2 cup potato starch
1 cup ground nuts

Cream oil and sugar. Gradually add almond flour, potato starch and nuts. Refrigerate dough for a couple of hours before rolling.
Roll dough into 1 inch balls and bake st 350 for 15 minutes. Once baked, roll hot cookies in confectioners sugar until coated. Let cool and sprinkle with a little more confectioners sugar.

Chocolate Banana Avocado Ice Cream

1 banana, frozen
1 avocado, peeled and frozen
2 tablespoons cocoa
2 tablespoons pure maple syrup
optional: mint extract, coconut flakes, chocolate chips, almond butter, etc

Place all ingredients into a food processor and process until broken down and ice cream consistency is reached. You will need to scrape down sides on occasion.
Feel free to add in optional add-ins at this point.
Will take around 2-5 minutes to reach desired consistency.

Chocolate mousse

Melt over double boiler
1 bar dark chocolate
1 Bag marshmallows
1/4 c water
Once melted, Whisk for 5 minutes. Remove from heat. Pour into individual bowls. Serve chilled.

Chocolate cake

3/4 c cocoa
1.5 c sugar
1.5 tsp baking soda
1.5 tsp baking powder
2 tsp vanilla
1 3/4 c potato starch

Mix

In a separate bowl, combine
1 c white grape juice
2 tbsp jam (can be omitted)
1/2 c oil

Add to dry mixture. Mix until just incorporated.

Add
1 c boiling water

Mix everything together.

It's very liquidy.

Pour into lined 9x13 pan.

Bake at 350 for approx 50 minutes or until done.
