I'm looking for the basic recipe where you cook salmon in water and it's sweet and tangy. People make gefilte fish that way too. My kids love it and I'd like to try making it

I caramelize a large onion in a cup of sugar. Dont touch the sugar and cook low and slow until the sugar is fully melted and the onions start to brown. Then add 3/4 c. lemon juice, 1+1/4 c. water and a teaspoon of salt. (When it isn't pesach I also throw in a few bay leaves.) When it simmers, I add in my salmon filets (usually 6-8) and cook for a half hr with the pot lid half on. After 30 min I turn off the flame and let it cool a bit with the lid fully on the pot.
