Soft & chewy biscotti

Anyone have a good chocolate chip biscotti recipe? Not chocolate chip sticks from dinner done but actual biscotti

I think I know what you mean but it's confusing because traditionally biscottis are hard not soft and chewy.
So I think you're looking for more of a cookie texture in a stick?
You can try this
1 c oil
2 c sugar
4 eggs
2 tablespoons vanilla sugar
2 tablespoons baking powder
4 c flour
1 cup chocolate chips
bake at 350 for 30 min

Rivky Kleinman has a recipe called Snickerdoodle Sticks. I can’t find the recipe ATM but it’s a very chewy biscotti.

Biscotti are baked twice, that's why they're crunchy. They're baked, cooled, sliced, rebaked. What if you didn't do the second bake?

The first Balabustas Choice cookbook has a recipe for mandel bread that is pretty soft and not crispy. I believe it has chocolate chips.

Snickerdoodle Stix
1 c sugar
2/3 c light brown sugar
2 eggs
1 c canola oil
1 tsp pure vanilla extract
3 c flour
3/4 tsp kosher salt
1 tsp baking soda
1/2 tsp cream of tartar (see note)
Topping:
1/4 c sugar
2 tsp cinnamon

In the bowl of electric mixer fitted with the cookie paddle, beat together sugars and eggs on high speed. Slowly, add oil and vanilla, mixing until combined.
Gradually add flour, salt, baking soda and cream of tartar, beating until well mixed and a soft dough forms. Refrigerate dough for 1 hour.
Preheat oven to 350. Line a baking sheet with parchment paper.
In a small bowl combine topping ingredients. Mix well. Sprinkle 3 sections of prepared baking sheet with 1/2 T topping each.
Divide dough into 3 parts. Shape each piece into a flat 3x10-inch bar over the sprinkled topping. Sprinkle remaining topping over the bars.
Bake on center rack of oven for 25-30 minutes. Remove from oven. Cool for 5 minutes. Slice into sticks.
Note: if you don't have cream of tartar, you can substitute with baking powder, but it will yield a chewier texture.
