I have leftover bananas, avocados, and potatoes. Any ideas on what I can make with them before they go bad? Preferably recipes that freeze well.
Obviously one recipe doesn't have to include all 3 items

freeze well:
banana muffins (hide some avocado in there too?)
potato kugel or soup
you can freeze raw avocado, not sure if it defrosts the same
chocolate avocado mousse
frozen bananas for smoothies

I peel my ripe bananas and then freeze them. They are perfect for things like smoothies and banana cake. I never tried freezing ripe avocados but you could try scooping them out of the peel, mashing them and then freezing the mashed avocado.
