How does sweetbread freeze?

I bought it frozen but would like to prepare it and then freeze again. Can I do that?

I don't know, but it cooks so fast, I wouldn't take a chance in freezing it already cooked and risk losing the soft texture.

It also defrosts pretty quick raw, I took it out from the freezer, and defrosted it overnight in the fridge, cut it into bitesized pieces, sauteed some onions and garlic until golden, added the sweetbread with some mushrooms, sauteed for about 10 minutes, and done!

Not concerned about the cooking time. I am concerned about the mess. I wanted to have everything cooked but I wont take a chance. So this will be fresh.

u cant freeze fresh meat then defrost it then refreeze it you can blanch it then refreeze

I just bought a piece today. It's $17.99/ lb. It comes in approx. 1 lb pieces.
