No longer exists, sadly. The Crown Hotel etc. is a thing of the past. Tower 41 is a condo that has a kosher restaurant where you can order Shabbos meals (very expensive.) Otherwise, it's takeout from 41st Street.

There's China Kikar Tel Aviv on 50th st. in the Carriage Club. Sometimes you an find ads in the Jewish Press for apartments for rent in there, or you can stay at a nearby hotel , such as the Alexander, a bit pricey, but if you call some of the ads in the JP , you can book a suite through the owners at the Alexander. It's usually more expensive if you book directly with the hotel. The Alexander is located at 52 st.
The restaurant costs around $55 per meal per person for shabbos.

I don't know how long you want to stay, but the Ocean Pavillion is a good choice, if you either have a car or don't mind the walk. Ocean Pavillion is on 56th and Collins. You can google it. Great, nice rooms, don't love the pool so much. Then you can either walk to Carriage Club for meals or get some take out if you have a car. It is kind of too bad there's no Crown, Saxony or Carribean. What do people do these days?

Ok I did some googling.
The Days Inn has Taste of china there that offers shabbos meals. I think I will book a room at the days inn and eat there.
