I know, I know, Tom Cruises kid. But we all know frum girls who had that name first. It's a nickname for Sara, right? What kind of pronunciation is that?

yes

"English Yiddish"?
Regular Yiddish is (among other forms) Sure (soo-reh), and in America you love to add -y in the end...

My daughter's called Suri, (she was called that even before Tom Cruise "came up" with the name) and it's pronounced exactly as written. It's a "chassidish" nickname for the name Sarah. Her official name on her documents is Sara.

I know a few sori(s) and suri(s) and sorole. I didn't know it was short for anything. Or long as the case may be.

I think Suri is the Hungarian style pronunciation while the Sori is more Russian. Sari is Israeli or American. We're speaking very general here.
