this is brilliant!!
I made a piecrust with only canola oil on friday. then I made piecrust for the top of a savory pot pie with olive oil today and I am on a roll!!!
take 1 c flour (can be some part whole wheat), add salt or sugar (depending on whether or not you want a sweet crust) and 1/2 a tsp of baking powder. then, add enough oil to make big crumbles that are starting to stick together from all the flour (this is probably 1/2 a cup).
then add a small amount of soymilk or water and mush it around gently in a stirring motion with a fork or your fingers untill it becomes a soft ball. press into a circle shape and either place on top of your pie filling or into your pie dish. bake like any regular pie crust. should be flaky and a bit crispy. pot pies should be a little more tender and crumbly than usual, but I like it- better than crisco, thats for sure!
