I recently made broccoli muffins instead of kugel and found it alleviated so much waste as I was able to freeze the leftover muffins for a later use, and they still looked nice as opposed to a half eaten kugel! Any suggestions for other kugels that have been successfully made into muffins. Checked the muffin recipe and found a good carrot recipe. Any others?

I think you can make any kugel in muffin pans. I have made lokshen kugel, potato kugel and apple kugel in muffin pans and froxen them, and they all came out nicely.

You can make potato kugel muffins, zucchini muffins, noodle kugels..

I jsut posted an apple kugel muffin recipe in a different thread.
also when I was younger my mother used to make potato kugelletes- she would put her potato kugel in small muffin type pans, but htey were more of an oval shape.

Carrot, pineapple, even pinktichels tri color should work in muffin cups. Just adjust the baking times.

Yup, I've had luck making any and every kugel into muffins...
To add to the list mentioned - cranberry cobbler.
Another idea that makes for great presentation: gefilta fish muffins. Defrost the loaf of fish 3/4 of the way and put into well sprayed muffin tin (I use aluminum disposable muffin tins). I top w/ marinara sauce and some tiny pieces of green pepper for color. Looks great!
