Is is okay to request certain types of foods (certain sheechta, for example)?

No but it is ok to bring along chicken with the particular shecchite u use with you. Or forego chicken that week.
Or to just say simply we are not real chicken eaters

I find it extremely sad and offensive such behaviour if I go anywhere where this problem may arise which I try to prevent before hand then I will always find atleast something I can eat.

Some people take their chumras way above and are clueless about offending another yid . There are lots of ways t o revent this beforehand and if one gets stuck then they can deal with it diplomatically lovingly afterwards without lowering their standards .
