I have lots of cans of salmon and need some good suggestions as to what to do with them. I've made salmon latkes (with onion, potatoes, seasoning), but we're all tired of those. Any ideas?

Salmon knish is great. Maybe a pasta with the salmon in creamy mushroom sauce.
Recently we made panini like sandwhiches using canned salmon, fried onions and red peppers Alondra with sliced avacadoe. It was yummy.

I want to try to make salmon casserole instead of tuna. Here is my easy tuna recipe that I plan to change (but I haven't tried it yet):
3 cans tuna (I think they are 6-7 oz?)
A little less than 1 lb cottage cheese
1 can cream of mushroom soup
3-4 eggs
1/2 cup rice (raw)
onion flakes
parsley flakes
dill
Combine all ingredients. Bake uncovered at 375 until done - about an hour, might need a little longer.
The original is great too!

salmon burgers
I have a recipe I use thats for tuna burgers that I substitute salmon from time to time. Its yum. I'll try to dig it up if you want it

I make a yummy salmon quiche as well as a yummy salmon roll-up (like a deli roll with puff pastry.) Let me know if you want the recipes.

theres a recipe in the garden of eden cookbook for canned salmon in a cream sauce. its really delicious but I dont have the cookbook so I cant post. maybe someone else here has it.
also in whats cooking. a salmon roll in dough with a mustard dill sauce. let me know if u want this recipe. I have this book.

Refresing salad:
take 2 cans of slamon (tuna also works great, btw)
mash with fork (drain liquid before)
add finely grated carrot and diced pickle (amount: to taste)
mayonnaise and salt (to taste).
My family loves it.

Pasta-salmon-mayo
take 1 cup (or more) of elbows, 1 can of salmon, salt and mayo to taste. Eat cool.

Salmon quiche (also is great with chunk light tuna)
1 onion, sauteed and kept separate
15 oz salmon
3/4 C mayo
1 T mustard
1 tsp lemon juice
2 eggs
1/2 C soymilk
fresh dill
pie crust (I make my own: 2 C flour, 1/2 C oil, 1/3 water or soymilk, 1 tsp salt - this makes 2 crusts and I keep one in the freezer. Press into glass pie plate.)
Line pie crust with sauteed onion. Mix rest of ingredients well and pour over. Bake at 375 until browned and set, about 45-60 min. Serve warmed but not hot or preferably cold/room temp.
Salmon Roll-up
2 cans 6 oz each salmon or 1 15 oz can
1/2 C breadcrumbs
1/2 C mayo
1/2 onion, diced
1/4 C celery, diced
1/4 C red pepper, diced
1 egg
1 tsp salt
puff pastry
Mix all and spread over defrosted puff pastry sheet, leaving a border on all sides. Roll up and place on baking sheet. Bake at 350 until browned, 35-50 min. Can use egg wash and sesame seeds before baking. Serve sliced with a cucumber dill sauce.

salmon burger:
1 med carrot grated
1 med onion finely chopped
1 can of salmon (6 1/2 oz)
1 egg
2 tbsp mayo
1 1/2 cup bread crumbs
1 tsp oil
salt and pepper to taste
mix all together season (works well in a food processor) make sure though u mash it well no large pieces of salmon left. Make in to patties. Grill pan fry or bake in a 375 oven till slightly browned and held together.
I put in on a bun with tomatoes sauteed onion and a garlic mayo sauce. Sometimes I also make them into nuggets (as opposed to a burger) and make a dipping sauce for the kids.
