Cook the food before yom tov, then on Friday afternoon put it on the hotplate you've plugged in since erev yomtov.
If you want something like soup, then leave the smallest ring on your stove on and heat it up and then transfer to hotplate before shabbos.

BTW, there is a halacha that even though we make eruv tavshilin you must still heat up/ cook the food in time that you could eat it on Friday if e.g. unexpected guests arrived; I.e. not heat it up / cook it very close to Shabbat.

What do you do about a chulant on shabbas. Can you set it up before shavuos in a crockpot or would it be really bad by after two days. What are the alternatives?

I'm going to leave the crockpot on with just water in it.
Then Friday, I'll make the cholent and cook it up on the stove. Before shabbos, I'll transfer it to the crockpot.

I'm going to have a fire on for the two days. Can heat up food on yomtov and then put the blech on for Shabbos. Make chulent as usual.

We use a plata though. Can you cook a chulant on a plata? If I put it on the plata Friday morning, would it be cooked (would it be good) when shabbas comes in (on shabbas day)?

I leave a flame and the oven, I'll make my cholent on the stove this shabbat, cuz my low setting on the crock pot is too hot for shabbat. Personally I reheat food in the oven on YT anyway.
