I am making my friend lunch on Wednesday (she just had a baby), and so far I've got soup, fettucinni alfredo, and maybe garlic cubes (or knots, or small dinner rolls, didnt decide yet). I'm just missing a salad, and I'm no good in that department. Anyone got something easy, without any fancy expensive ingredients?

How about just a regular green salad full of assorted veggies and a dressing on the side? The kosher by desgin lightens up has a great creamy garlic dressing recipe(let me know if u need me to post it)..or you can make a simple balsamic vinaigrette.
I would stay away from a very creamy/heavy salad b/c the alfredo sauce is pretty heavy itself(but delish!)

That's why I'm asking! I dont want to make a Ceaser salad because of the creamy dressing. Can you please post those dressing recipes? I would really appreciate it.

Definately go with a leafy dressing and a vinaigrette on the side.
You can make a balsamic vinaigrette salad. Use romaine lettuce and halved grape tomatoes. For the dressing, combine 1 Tbsp balsamic vinegar, 2 Tbsp olive oil, 1 clove garlic crushed or 1/2 tsp garlic powder, and salt to taste.
