Anyone have any good nut free cake/cookie recipes for pesach?
Non gebrokts, ingredients limited to sugar, eggs, potato starch, and fruits/veggies that can be peeled

My dh and kids love this one. Just realized you may not use all the ing. but here it is.
Chocolate Crinkle Cookies
2 C. Potato Starch
3/4 C. Oil
3/4 C. Cocoa
2 C. Sugar
4 Eggs
2 tsp. Vanilla
2 tsp. Baking Powder
2 C. Powdered Sugar - for rolling balls
Preheat oven to 350
Mix oil, cocoa, and sugar. Beat in eggs one at a time. Add vanilla. Add in dry ing. and chill batter several hours or overnight covered in fridge. ( you may need to add more starch is it looks liquidy at this point) Cover your hands well in powdered sugar and roll some batter into a ball. make sure ball is coated completely in white. bake on parchment paper for 10-15 min. until just starting to crinkle.
Freezes really well.
Note: Space widely apart on parchment paper as they tend to spread while baking.

mominlkwd, thanks for the recipe. I dont use baking powder. do you think it can work without it?

Unbelievable Brownies - KBD
4 large eggs
2 cups sugar
1 cup vegetable oil
1/2 salt
3/4 cocoa powder (Dutch process)
1 cup potato starch
1/2 cup semi-sweet chocolate chips (optional)
Preheat oven at 350. Grease a 11 x 7 inch brownie pan. Set aside.
In the bowl of an electric mixer, beat the eggs and sugar until smooth. Add the oil and salt. Mix. Sprinkle in the cocoa powder and mix to make the batter chocolaty. Add the potato starch and mix to combine. Scrape down the sides with a spatula. Stir in the chocolate chips if using.
Pour unto prepared pan. Bake for 35-40 minutes. Allow to cool before serving.
I have a great carrot muffin recipe that actually is quite healthy, though not low fat. It has a ton of nuts in it though.

I dont mind fat (haha. in theory)
Could you post the recipe? I could always just try to leave out the nuts, unless its what's holding the muffin together.

Sorry, it has 4 cups of ground nuts (ie. nut flour) in it. It won't stand a chance without the nuts.

1 Tbsp potato starch
1 cup sugar
1 Tbsp vanilla sugar
1/4 tsp cinnamon
1/8 tsp salt
1/4 cup oil
1 cup Pesach crumbs or crushed lady fingers
Preheat oven to 350. Spray 12 mini muffin tins with nonstick cooking spray or smear each cup with oil.
Combine all ingredients, except for the crumbs, in a food processor bowl, and pulse until a smooth mixture forms.
Divide the Pesach crumbs in half. Distribute the first half inside the muffin tin cups. Pour the carrot mixture over these crumbs. Top the carrot mixture with the remaining crumbs. Bake for 40 minutes, until muffins are firm.

You can probably make this in an 8x8 cake pan. I say go with the crumbs. Just crush up some lady fingers if possible.
