Anything vegetable will work. Soups, sides. Just make a lot of whatever vegetable dishes are liked.

Kitniot? I'm guessing no. If yes, this isn't even hard.

Sauteed (olive oil) cauliflower done just right can be incredible. So can sautees Mushrooms.

In general, vegetables fried in olive oil will give both crunch, flavor, and calories (from the olive oil)

Besides vegetables?
Or any specific recipes, ideas with the vegetables??
How to incorporate vegetables, nuts, etc.

Veggies and nuts basically. Maybe try making things with almond flour. If they're vegan for medical reasons they may have a heter for kitnyos.

Walnut taco meat with guacamole, cauliflower rice, cabbage, pickled red onions
Eggplant stuffed with walnut dip
Mushroom walnut dip with matzah
Hearts of palm ceviche with sweet potato chips
Pesto with roasted veggies
Plantain tortillas with nut butter

Did you ask for a heter for kitniot or quinoa

Carrot chips
Roasted potatoes and sweet potatoes
Salad with cubed Avocado
Eggplant slices with coated with nuts, you can top with a scoop of mashed potatoes
Parsnip, kohlrabi, butternut fries
Beet salad
Cucumber salad
Tropical fruit salad Romaine, mango, pom, pineapple, kiwi with a lemon or orange juice dressing

Baked apples coated with nuts
Sweet glazed carrots with pineapple
Raw carrot salad with pineapple
Sautéed cubed zucchini you can also add in carrots
Baked acorn Squash ring with sautéed veggies inside

Egg free potato kugel.

Plantain tortillas (green plantains) boiled, drained and pureed, then potato starch and salt added, roll out and make tortillas/crepes in a skillet. Add well seasoned colorful roasted veggies, and roll up.

Small roasted zucchini boats with almond "tehini" drizzle, and garnished with pine nuts and pomegranate seeds.

Walnut taco "meat" in butter head lettuce cups.

Stuffed peppers filled with riced cauliflower, riced sweet potatoes, and some sprinkled nuts.

Fried eggplant rounds, a nice mound of mashed potatoes, and crispy fried onions on top.

Hearty potato leek soup.

Meatballs or burgers made with mushrooms, sweet potato and nuts.

Veggie sticks with a nice thick guacamole.

Salted, roasted spaghetti squash seeds to snack on.

Make sure to make some almond flour baked goods. This person will be starving with only nuts as a semi protein.

Sliced potato and sweet potato sautéed with onions
Potato and sweet potato fries
Baked whole potatoes and sweet potatoes
Roasted cubed butternut Squash with honey and cinnamon
Sliced green and yellow Squash Roasted
Cubed Avocado & tomato salad with red onions, if use tom or peel with special peeler.

Wow! So fancy and creative.

Any baked goods with Almond flour will need eggs? No? She didn't respond if they do eggs or not

We're having a vegan guest for a seder. I'm offering a soup, a modified ratatouille, using Indian spices (cumin, coriander, cayenne) instead of French ones, popcorn cauliflower, roasted veggies, salad(s) and pears poached in wine sauce, as well as a mix of dried fruit and nuts, for dessert.

My opinion is that it's not my job to provide 5 ways for a daily protein balance to be met, particularly when it's late at night. I trust that a vegan thinks about that and tries not to depend on any one meal, especially when eating out.
