anyone have a recipe where they substituted flour with cake meal? Or some other matza brei breakfast type thing?

My mom makes the most amazing Cottage Cheese Pancakes - we enjoy them year round...
I never actually use a recipe - just keep mixing ingredients until it looks right but this is the basic recipe
(Serves 4-6)
6 eggs (can use 3 whole eggs and 4 egg whites)
1 tablespoon vanilla
1 container of cottage cheese (about 12 oz I think)
1/2 cup cake meal
(can add some sugar or applesauce for sweeter pancakes)
Mix together and pan fry in butter or oil.

This is my family's Pesach pancake recipe - but you have to mulitply the quantities significantly - they go so fast.
Beat one egg. Add ½ cup milk and/or water, plus a little salt. Mix in sufficient matzo meal to make it fairly liquid and allow to stand until it thickens. Fry on medium heat until golden brown. Serve with cinnamon & confectioner’s sugar (or regular sugar if you don't have it).
Pesach Rolls (great with jam/cream cheese/just by themselves)
8oz medium matzo meal (sorry, I don't have that in cups)
1 tsp salt
3 tsp sugar
8 fl oz hot water
4 fl oz oil
4 eggs
Mix meal, salt and sugar
Pour oil into water and heat and when it is bubbling, add meal all in one go and quickly stir over low heat until in a ball. Remove from heat and beat eggs, add one at a time, mixing until smooth and thick. Set aside for 30 mins and at same time turn on oven to 375F so it’s hot when you’re ready. Roll walnut size pieces and put on baking tray (preferably onto parchment paper but if not, onto greased tray). Bake 40-50 mins until rich brown. Alternatively, half fill muffin pan/cup cake holders.
