I need to make several cheesecakes for shalosh seudos this coming week. I know that I can freeze them, but was wondering how far in advance they can be made and just kept refrigerated?
Any thoughts? Thanks.

You can make them wednesday already and keep in fridge. They last a few days in the fridge.

They are both baked cheesecakes. One is basically cream cheese, sour cream, eggs and melted chocolate in a chocolate cookie crust baked for 30 minutes in a 350 degree oven and the other is cream cheese, sugar & eggs baked for 1½ hours at 350 (they are very different in texture and consistency).
