I need an easy zuchinni recipe that does not have sauce or ketchup or any wheat flour (like a kugel or muffins) and preferably no breadcrumbs (as they have wheat).

I would make it like a potatoe kugel.
Grate zuchinni and 1 onion. Squeeze out extra water. Add 2-3 eggs, salt, pepper, garlic and wha ever other spices you like. Pour oil into the pan and heat it up. When it is nice and hot, add the zuchinni mixture and bake.

I cut up zucchini and onions and sautee them in olive oil with a little salt and pepper. Sometimes I add a bit of soy sauce.

I make roasted zucchini a lot. Cut up zucchini into chunks or slices. Toss with olive oil, salt & freshly ground pepper. When I have time I add minced fresh garlic. You can also add chunks of red or yellow pepper, fresh mushrooms, & yellow squash. Spread the vegetables in a single layer on cookie sheets & roast at 425. Really delicious, especially right out of the oven.

I make this all the time and it's excellent. You can even leave out the herbs or opt for basil/parsley/etc instead. I also roast the zucchini for longer, but that's up to you.

You can saute crushed garlic and then add sliced zucchini, s&p and a drop of water. Cook covered, on a low flame.

almond zucchini kugel
4 zucchinis washed and scrubbed with peel on
1 carrot
3 eggs
1 onion
1 Tbsp. onion soup mix (optional)
salt, pepper, garlic powder to taste
1 cup almond flour or ground almonds
1/2 cup oil
grate zucchini, carrots and onions (I use the the food processor shredding blade) mix all the rest of the ingredients together and pour into a 9" round pan
bake uncovered for 1 hour on 400 degrees
enjoy!
