I'm having guests shabbos day and need a starch to serve with the meal aside for challah. I am not planning on putting on my blech/plata because it heats the house dreadfully. I need a starch that would be good cold, but all my usuals are out the window because they call for mayo or vinegar, which the guest asked if I please not use.
Ideas?

This brown rice salad is really good.
1 c. brown rice, cooked firm and rinsed in cold water
1/2 c. raisins
1/2 c. sunflower seeds
2 scallions (or red onion)
1/2 red pepper, finely chopped
Dressing:
1/4 c. oil
1/4 c. soy sauce
1 tsp. garlic powder
pinch pepper
marinate

If only I had any of those ingredients in my house- no raisins, no sunflower seeds and no brown rice.

Cook angel hair pasta or spaghetti (about 500g), rinse well.
Saute one finely chopped onion, one finely chopped red pepper, one finely chopped yellow pepper for a few minutes until soft.
Mix 1/2 cup soy sauce, 1/2 cup olive oil, 1/4 cup sugar and one crushed clove garlic.
Combine all of above. Best to make this salad the day before (ie Friday or even Thursday for Shabbos) as the flavour develops.
This is always a big hit in my house. I think it originates from one of the KBD books.

Tabbouleh is my first choice. My other first choice is stir-fried veggies in noodles, dressed in toasted sesame oil and soy sauce. We're having that.

I was going to post but thought you might find it condescending
Anyway, I just took some scallion, a (red) pepper, week-old celery, some crushed garlic and ginger and sauteed for a bit just to take the edge off the crispness. You can add carrots, broccoli - whatever you have in the house. Nothing soft though - the veggies need to be crispy.

All of them! Just put the zucchini mamash a couple of minutes so it does't get mushy. Seraph, it's going to be delicious. Cabbage is so good stir fried. So is pepper. So is zucchini. Add the color of carrot and you will have a yummy cold starch!. Let me know, okay?

- couscous can be served cold
- pasta salad--just dress with a small amount of olive oil, sun dried tomato and/or olives
- sesame noodle--egg noodle cooked and drained. combination of peanut butter, tehini, soy sauce and a bit of honey/sugar. toss with chopped salad onion/scalion and chopped red/yellow pepper
- plain boiled baby potatoes--dress with a bit of olive oil and chopped herbs
