I wanted to make eggplant parmesean (sp?) for one dinner this week but I really dont think it would fill everybody up. I would make a salad to go with it, but is there a way to make the eggplant parm. itself more filling? would it be weird to stick lasagna noodles in one of the layers? TIA.

I sometimes make eggplant/pasta parmesan. I make it with a layer of ziti, elbows, or whatever pasta I have around (sometimes to put leftover to good use ), mixed with sauce, and cheese if desired. Then I put the regular eggplant parmesan layers on top. It's all in one pan, and much more filling.

A lot of restaurants serve eggplant parmesan with a side of spaghetti and marinara sauce.

Yeah, you're supposed to bread and fry the pieces of eggplant before baking it.

I serve it over thin spaghetti with olive oil, dried herbs and salt.

Why not do a healthier side like veggies? If you're really worried about everyone going away hungry, serve with a potato side.

What it needs is more protein, not more starch. It already has breading and oil. Add tuna? Or serve with fish? Or add lots more cheese?

You can also make the salad more filling by adding something starchy and filling like corn, beans, chickpeas.
