I have lots of leek that are going bad and need to be used up asap.
Do you have any ideas of how I can use it for Shabbos besides for adding it to the chicken soup and cholent (which I anyways always do) and to the chicken? Maybe a dip?

Make what we make for Rosh Hashanna: leek patties. Yum. You can also saute them with mushrooms, add seasoning (soy sauce or whatever you like) and serve over rice. Also yum. They are like onions.

Cut up the white part of the leeks, into rings. Cook in water for about 5 minutes until soft. Drain and cool. Squeeze out as much liquid as you can. Process with egg, bread crumbs, salt and pepper plus a cooked mashed potato. Form patties and fry until golden.

cut them into strips, fry till crispy and add it to salad.
I like to use rocket, roasted pumpkin, fried leek and nuts with balsamic dressing. it tastes really gourmet but is easy

Another vote for leek patties. (I've posted recipe several times, look under Rosh Hashanah). You can actually freeze now for Rosh Hashanah if you want.
Or you can stew with chicken pieces.
Leek and potato soup.
