I would really appreciate it if someone would post the grilled vegetables recipe from last week's magazine (I'm pretty sure it was Mishpacha). I can't seem to find it anywhere! It involved eggplant, sweet potatoes ,red pepper..and I can't remember anything else.

From Mishpacha:

Roasted Vegetables

1 eggplant
1 large sweet potato
1 red bell pepper
1 medium onion
6 T. oil
1/2 T. parsley flakes
salt and pepper, to taste

Cut veggies into chunks, leaving the peel on the eggplant and sweet potato.
Toss all veggies with oil and spices.
Bake at 350F for 1 hour.
