Anyone ever braid challah, freeze, defrost, & rise then bake? or any type of variation of that?

I have never had success doing that (and I've tried a number of times) but I know people who do all the time without a problem.

I do that and I really love it!It comes out perfect! I let dough rise then braid then freeze right away before it starts to rise. I then take it out of freezer on Friday morning and bake it at about 2....never had a problem with it...

This never works for me, but I have frozen the dough then braided after it has defrosted.
I prefer to freeze baked challahs.

This is my SOP for challa. It saves so much time on Erev Shabbat but we still get fresh hot challa on Friday night!
I have had times when one DD forgot to bake them so they defrosted for many hours (and were delicious) and other times when DD2 put them in almost immediately after taking them out of the freezer and they were great as well.
Best to defrost for about two hours and then bake.
Go For IT!
BTW If anyone can take challa for refuat Achinoam Chaya bat Yael, my 13 day old granddaughter, please let me know by PM or email...she is still fighting for her life.
