Stuffed Zucchini

Stuffed Peppers - Binah Magazine -Pomegranate
• 4 medium sized peppers
• 2 lbs. ground beef
• 1/2 cup cooked rice
• 1/2 cup shredded carrots
• 1/4 cup ketchup
• 2 Tbsp sugar
• 3 cloves garlic, crushed
• 1/4 cup paprika
Sauce
• 1/2 of a (15 oz.) can crushed tomatoes
• 1-1/2 cups cold water
• 1 (10 oz.) can tomato sauce
• 1/2 of a (6 oz.) can tomato paste
• 3/4 cup sugar
• 1/2 cup white vinegar
• 2 Tbsp paprika
• salt and pepper to taste
Combine stuffing ingredients in a bowl and mix well.
Cut off tops of the peppers, hollow out, and rinse.
Stuff peppers with meat mixture, filling slightly over the top.
Place stuffed peppers in a baking pan. pour sauce over each pepper, completely covering.
Cover the top of the pan with parchment paper and then foil.
Bake at 350 for 2-1/2 hours.
