so really its best in the winter
1 crust
5-6 med sweet potatoes masghed
1/2 c sugar
3 eggs\
1/2 cup coffe whitner
1 tsp vanialla
topping
1 stick margerine
1 c flour
1/2 brown sugar
1 c shopped pecans it is yummy and freezes excellente

1 c. mashed sweet potato
3/4 c. brown sugar
1/4 c. flour
2 eggs
1 c. vanilla soy milk/coffee rich
1 1/2 t. cinnamon
1/8 t. salt
pie crust (graham)
Mix all ingredients together and pour into pie crust. Bake 10 min on 400, then 40 min on 350.
This recipe is easy & delicious but not so healthy!

Can't find my recipe, but it's very similar to lizard8's. Instead of a pie crust, though, it has a crumb topping - flour, margarine and brown sugar. Delicious!

Here is mine:
Sweet Potato Pie
2 lb. sweet potatoes ¾ cup sugar
½ cup brown sugar ½ cup margarine – cut
½ tsp. salt ½ tsp. cinnamon
½ cup milk 1 tsp. vanilla
3 large eggs
1 deep dish pie crust (or "No Roll Pie Crust") or 2 regular pie crusts
Beat hot sweet potatoes until smooth. Add margarine a few pieces at a time until melted. Beat in remaining ingredients except eggs. Add eggs one at a time. Spoon into crust(s). Bake for 60 to 65 minutes at 375°.
No Roll Pie Crust
1 c. flour 2 tbsp. sugar
½ cup margarine 1 tsp. vinegar
pinch of salt
Process in Cuisinart or with hand mixer until ball forms. You may need to add more water. Put in 9-inch pie plate or spring form pan and pat evenly.
*This does not have to be baked before for the sweet potato pie.

this one's really simple, and better than most I've tasted:
boil 3-4 small/med. sweet potatoes or 2 super huge ones
drain
mash or put in food processor.
add one egg
add 2 TBL brown sugar
add 1 tsp cinnamon
pour into graham cracker crust.
bake about 45 min. to an hour at 350*
enjoy.
