I have a three year old and 15 month old who can be picky about what they eat. Im looking for ways to add more vegetables to their menu. Does anyone have any good ideas of what toddlers would enjoy eating? Recipes would be helpful! Thanks!

steamed baby carrots

zucchini bread

oven-baked squash (butternut, for example) mushed up and put into tiny molds in the shape of animals, stars, etc.

Broccoli "forest"
Greenbeans (plainly steamed, I serve with a bit of mayo for the kids to dip in)
Any steamed finger size vegetables with various dips
Sweet potato
Pureed vegetable soups

In general, I'm not a fan of "let's mash everything and camoflouge so they can tell the taste or the shape" school. Kids do need to know eventually what they're eating. Having said that, it often works to chop various vegetables (red peppers, carrots, celery, courgettes) and cook with tomato sauce to make base for pasta sauce or meatballs.

Do you also have a pick-your-own farm nearby? My kids enjoyed eating vegetables they picked.

Home made pizza, put any veggies you want on top and only then put the cheese on it.
My dd calls zucchini "the one from the pizza" and will now eat it in anything else.

My son loves peas and carrots. He'll also eat butternut or acorn squash and veggie kugel from Shabbos.
