I have a great recipe for apple muffins. its cubed apples on the bottom and a batter on top. kids love it, and ive even served it to bochurim, who ate 2-3 each! if youd like the recipe, I can post it. just let me know. its in the KBD cookbook.

Slices of apple add a great crunch to any salad. I had a great side dish over YT that came from weight watchers. It was apples and sweet potatoes. You can probably google it.

sorry if you wanted this before shabbos-I just saw that you weanted the recipe last night.

3 large eggs
1/2 cup canola or vegetable oil
1 cup sugar
1 tsp cinnamon, plus extra
1 tsp almond extract
1 cup flour
1/2 tsp baking powder
2-3 medium McIntosh or Rome apples, peeled & chopped into small pieces
1/2 cup chopped walnuts or pecans, optional (ive always left this out)


preheat oven to 350. heavily grease 12 muffin tins with nonstick cooking spray. (I just put in the cupcake liners, and took the muffins out of them before I served them-comes out looking just as good)

in a large bowl, mix the eggs, oil, sugar, cinnamon, almond extract, flour & baking powder at medium speed, beating until batter is smooth. do not over-mix.

place a small mound of apples into each prepared muffin tin. spoon batter into each tin to cover the apples. sprinkle w/ cinnamon and add nuts, if desired. bake 20-30 minutes or until toothpick in center comes out clean.
