Chicken Mole (Mexican but not terribly bitey)
from Woman's Day
pkge chicken cutlets, cut up
cut up onion
6 garlic cloves, cut up
1 T cocoa powder
1/2 tsp EACH: cinnamon, pepper, ginger
1 cup peanut or almond butter
can crushed tomatoes (15 oz)
2 cups water or soup broth
cut up piece of bread or bread crumbs
You sautee your onion in oil and add the garlic and the chicken. After about five minutes, add the rest of ingredients and cook about 15 minutes, or until done. Serve with rice.
