The Middle Eastern Rice Salad
Serve warm or cold
3 cups rice, leftovers are fine
2 T olive oil
small cut up onion
16 oz can of chickpeas
½ tsp cumin
pinch salt
pepper to taste
½ cup chopped dates
¼ cup fresh mint
¼ cup fresh parsley
Sautee the onion and add the rest of the vegetables, along with the rice. Toss well.
