Couscous Salad
From Self magazine
¾ cup couscous, any
2 cup up tomatoes
handful of corn, any kind
2 T feta cheese, optional
½ tsp thyme or basil
½ tsp lemon zest & 1 T lemon juice, or 2 T vinegar and sprinkle of soy sauce
1 tsp olive oil
You cook the couscous and let cool; stir in remaining ingredients and serve hot or cold.
