Hi,
I'm having a one small family and two singles for friday night, usually I make a soup, main, starch, veg and salad and dessert. We're invited for lunch so I'm thinking of adding a dish, preferably something I can freeze for future hectic weeks.
So far I have
Vegetable soup
Chicken and rice
Sweet carrots
lettuce salad
chocolate cake.

You can make:
Apple strawberry kugel in a pyrex
Cabbage and noodles,
Cabbage with tomatoe sauce
Potato pastrami kugel
Based on what you have so far, I would go with a kugel not sweet since you have the carrots.
I would make the pastrami kugel. I think there is a recipe in KBD - short on time
Or the cabbage with the tomato sauce
