Some dark brown sugar. Just 1 or 2 tablespoons. You can leave out the ketchup and bar-b-que sauce.

Maybe it has to do when you put it up & if you cook it in pot or crockpot/slow cooker.
In a pot it tends to be lighter. And the longer you cook it the darker it becomes.
I do mine in a slow cooker, put it up friday morning or sometimes thursday night & I get a dark cholent.
I put in chulent mix, a bit of onion, cheek meat, potato & salt, paprika, black pepper, onion powder & garlic powder. never had it a light color.

definately has to do with how long it cooks. I used to put up my cholent on friday and it was always a light brown...now I started putting up thursday night (same cholent) and it comes out much darker.

I had the same issue, until someone advised me to saute the onion until brown. That did it!

Soy sauce! I put salt, pepper, paprika, onion, ketchup and soy sauce, and is very dark. I start cooking it in a pot on Friday morning, let is cook for a few hours, then it goes on the blech till we eat it.
