SPAGHETTI SQUASH WITH GREENS
From Clean Eating magazine
spaghetti squash, about 3 lbs.
2 small heads radicchio or other greens, about 4 cups
salt and pepper to taste
1/2 cup chopped fresh parsley
18 olives, quartered
juice of a lemon
2 oz Parmesan cheese, optional
Half your squash and bake or nuke it. When slightly cooled, fork out the strings. Add to rest of ingredients and serve warm or at room temp.
