Fish in Ginger tomato sauce
another keeper form the Claude roden book
1 lb fish filets
3 chopped cloves garlic
3T olive oil
1 lb tomatoes cut up - or sauce
pinch each of salt, pepper, sugar
1/4 tsp turmeric
1 1/4 inch fresh ginger or a few shakes of the dried/powdered
Heat oil and garlic and add your tomatoes or sauce, salt, pepper, sugar, turmeric and ginger, and cookl for about 10 minutes. Add the fish and cook for about 6-10 minutes.

Fresh ginger or powdered? How much? Do you think this would work with salmon?

I amended the recipes, sorry. I'm not a ginger expert yet.
I don't see why it wouldn't work with salmon but I never eat it as it gives me hives.
