"Shrimp" with walnuts and pesto
from Oxygen magazine

half a package frozen shrimp or lobster, defrosted
4 oz whole grain pasta
1/2 cup spinach leaves or the froz equivalent
basil leaves, a cup
2 T chopped walnuts or other nuts
2 T lemon or lime juice
1 tsp zest from above
garlic clove, cut up
olive oil
salt and pepper to taste

You cook the pasta or use leftover, add the fish. Set aside.

In food proc, make your pesto - spinach, basil, nuts, juice and zest. Add garlic, salt and pepper to taste, and 2 T olive oil. Scrape into bowl with fish and pasta; serve cold.
