Easy Vegetable Bisque
From Family Circle
Makes 6 servings
Onion
1 apple
3 carrots
2 T fat
2 - 12 oz packages of frozen squash (butternut)
3 cups water or broth
2 T sugar
1 tsp ginger
3/4 tsp salt
1/2 tsp cinnamon
Process onion, apple, and carrots in food processor on shredding blade. Heat the fat and add mixture and let cook about 7 minutes. Stir in your squash, water or broth, sugar, ginger, salt, and cinnamon. Let simmer for about 5 minutes. Puree whole mixture and serve hot.
