The Smoky Chicken Paprikash (uses leftovers)
From Fitness magazine
Makes 4 servings
Oil
1 1/4 lbs. chicken, cut up; leftover is OK too
pepper to taste
2 cut up peppers
1 cut up onion
1 T garlic
1 T paprika
1/2 cup dry white wine
1 cup canned crushed tomatoes
1/2 cup water or broth
1 tsp flour
1/3 cup mayo
2 T dill
2 tsp lemon
grain to serve, whatever you like
Cook the chicken if not using leftovers, and add onion and peppers to skillet and let cook until soft, 6 - 8 minutes. Add garlic and paprika and stir, add the wine. Let cook another 2 minutes. Add the tomatoes and broth and let simmer.
Mix your flour into the mayo in small bowl and add to soup. Add the dill and lemon and the pepper. Serve over a grain, if you like.
