The Chicken Sweet Potato Stir Fry
From Prevention magazine
Makes 4 servings

1 cup grain, your choice, and leftovers are good too
1 peeled & cut up sweet potato
oil
12 oz chicken, cut up; leftovers work great
1 cut up onion
1 jalapeno, optional
1 cut up pepper
1 clove minced garlic
1 tsp cumin
1 cup peas, defrosted
3 T cilantro
pinch each of salt and pepper

Prepare your pasta or grain, if not using leftover. If not using leftover chicken, heat oil and add your raw chicken. Cook sweet potato in cold water for about four minutes or until soft. Drain.

Cook onion and optional jalapeno in pan and add the pepper, garlic and cumin. Add the peas, your grain and the chicken. Add the spices and serve hot.
