dh decided he doesn't like my breaded chicken cutlet. I dip in breadcrumbs, eggs then breadcrumbs and fry it and he claims its to dry. Any suggestions?

I add my seasoning to my eggs and add a bit of oil to it. I thin dip the cutlet into the egg, then dredge in breadcrumbs. I then bake them on an oiled cookie sheet for 10 minutes (these are thin cutlets), flip them and bake for another 5 minutes at 350 degrees F.
You can try seasoning mayo, then dipping the chicken in the mayo and then roll in the breadcrumbs. The mayo should keep things moist.
Also, don't overcook them.

I dip the cutlets in seasoned breadcrumbs, French dressing and again, seasoned breadcrumbs. Spray a pan with pam. Cover and bake for 35-40 minutes @ 375. We like the cutlets thin. If you leave them thicker, you may need to lengthen the baking time.

If he likes them moist then mayo is pretty foolproof.
Also try not to overcook them, the oil should be hot when you put the shnitzels in and a few minutes on each side is enough (the second side is always less time but total time will depend on thickness).
