Chicken Namaste (uses leftover chicken)

6 oz jar artichokes (drained)
14 oz can diced tomato
1/4 cup sliced black olives
1 T vinegar, balsamic if possible
pepper to taste
3 cups diced cooked chicken

Heat up and eat. Serve with a grain and enjoy !!!

sounds good minus the artichokes...I would have to substitute them...lol.

maybe roasted red peppers...I dunno...when I get to making it I will look around the store for ideas.
