Does anyone have a recipe for a soup that combines a bunch of different orange vegetables? My mil made it, the kids all loved it but she doesn't have a real recipe.

I don't think there is a real recipe, but it always comes out great. Saute some onions, add a bunch of orange vegetables (though not just carrots), such as pumpkin, sweet potato and butternut squash. Add water to cover, add salt and paper. Cook until everything is soft and then puree.

My kids love it too. I have a pot on the stove now. Smile

I dont have an exact recipe either.
I fry one or two big onions, depending on the amount I'm making, plus some garlic.
Then I add (cut up) pumpkin (they sell it in big pieces, I get the biggest I can find, sometimes 2 if we're a lot of people), about 3 sweet potatoes and a bag of carrots.

Thanks. This version had some cinnamon in it. The last time I tried a soup with inexact measurement of cinnamon, it came out pretty badly.

Why dont you just try a bit at a tima and keep tasting it.
I do that with ginger in this soup.

Does anyone ever use frozen butternut squash? I only use fresh but I just don't have time/energy to peel and chop a fresh butternut squash.
I also put in onions, lots of sweet potato, and sometimes carrot.
I puree it anyway so I'm wondering if it will taste different.

I love this soup I make it with curry powder to cut the sweetness of the butternut squash. I sautee onion and garlic and then the veggies usually carrots, sweet potato and butternut squash until they are brown and soft. Then I add water and simmer and then puree. If I want it to be the meal itself I add gnocchis from the supermarket.

I make an orange soup with all vegetables:
1 onion sauteed with leek, 1 butternut squash, 1 zuchinni, 1 sweet potato, 1-2 potato, 1 parsnip.
salt, pepper and dried parsley.
boil up and then puree with hand blender.
